The Universal Chia Seed Pudding Recipe

A creamy, delicious, and healthy breakfast or snack option! Chia seeds are rich in fiber, protein, and omega-3 fatty acids.

Ingredients ( per serving )

1/4 cup chia seeds

Our key ingredient! They have the curious quality of swelling when combined with liquid, making them ideal for creating puddings like this one.

1 cup unsweetened almond or coconut milk

I find almond milk, coconut milk, or a combination of them to be the best choice for these puddings, but any type of milk would work best over water!

1/2 - 2 tablespoons honey or maple syrup

Optional - based on personal sweetness preference. If you are vegan, use maple syrup instead of honey.

1/2 teaspoon vanilla extract

Optional - vanilla and coconut are a great match. It complements the sweet flavors and brings the warm weather/island vibes that we all need.

Fruits of your choice

Recommendation: berries, bananas, mangos, apples, peaches etc.

Crunchies of your choice

Recommendation: granola, nuts

Step 1

In a bowl, mix together the chia seeds, almond milk, honey or maple syrup, and vanilla extract.

Step 2

Stir well to combine and let it sit for 5 minutes.

Stir again to prevent clumping, then cover the bowl or jar.

Step 4

Refrigerate for at least 2 hours, or overnight, until thickened.
